Brussels sprouts are a very polarizing vegetable. People tend to love them or loathe them. One time, at the start of one of my CrossFit classes we all went around introducing ourselves and sharing what our favorite vegetable is, and I think 9 out of the 12 people there said brussels sprouts (including myself). I told my boyfriend that, and he told me that I was working out with “a bunch of freaks.”
But I’m on a mission to convert the haterz into lovers. I’m convinced that anyone who “hates” brussels sprouts has just never tried properly prepared brussies. My two favorite ways to make brussels sprouts are both very simple, and very yummy: 1) cooked stovetop with some olive oil and sea salt, 2) roasted with olive oil, bacon, and sea salt. I love them without the bacon, but bacon does make everything taste better So I’m gonna share with you my basic bacon brussels sprouts recipe with you today!

Now onto the brussies.
Bacon Brussels Sprouts
1-2 pounds brussels sprouts, trimmed and cut in half
2 Tbsp olive oil
3 slices nitrate free bacon
1 tsp sea salt
- Preheat oven to 400 F and line a baking sheet with aluminum foil
- Chop the bacon into small pieces (cutting raw bacon is really hard unless you have a good, sharp knife, so if you don’t have one, you should invest in one)
- Toss the trimmed and halved brussels sprouts in olive oil.
- Spread the sprouts out on the foil lined baking sheet, sprinkle with sea salt, and spread the chopped bacon among the sprouts.
- Bake for 25-30 minutes, stirring the sprouts around after 15 minutes.
And there you have it. The sprouts become caramelized and sweet, and the salty bacon complements the dish wonderfully.
