So grain free baking. Impossible, right?
Grain free baking is notorious for being pretty much scientifically nonviable. Working without gluten is the biggest hurdle in creating delicious baked goods, and working without any grain flours at all complicates matters even more. Lucky for us, there are a few people who seem to have the magic touch (or maybe are just really smart) and have figured out how to make grain free creations that rival their gluten filled counterparts–Brittany Angell is one of those people. I think her brain functions at like a higher level when it comes to baking, because her creations are out of this world.
Brittany’s new book, Every Last Crumb, proves that those of us who can’t (or choose not to) consume grains don’t have to definitively say goodbye to baguettes, waffles and bagels. I never thought I’d see the day that paleo croissants came into existence, but thanks to Brittany, what used to be unfathomable is now very much a reality.

I’m obsessed with the honey “cornbread” muffins. I’ve made them multiple times and they’re ah-mazing every time.
I will say this though. Due to the delicate nature of grain free baking, it’s best to not attempt any modifications. Learned it the hard way… haha. Brittany knows best. Listen to Brittany.
