One of the most frequent questions I get from friends is: “Is it hard to eat Paleo when you’re at school and on the go?” And honestly, sometimes I do struggle with it. Sometimes I don’t feel like cooking, or I feel like I’m fresh out of ideas for portable snacks and meals. But it doesn’t have to be hard! All you need is a little kick in the bum to realize that, and then the right resources and knowledge to empower you.
As I’m settling in at a new school in a new city, I’m still working out how to best manage my time. Between classes, homework, workouts, recipe development and blog work, social enterprise projects, and making new friends, I’ve got plenty on my plate. In a former life, I might have used this as an excuse to eat crappy food and order a lot of takeout. However, health (both mental and physical) is my highest priority, so I take that extra little bit of time to plan for the week and ensure that I’ve got good options when I’m on the go. But sometimes I feel like I’ve hit a wall and have absolutely no new ideas about what to pack for lunch or what would make a good snack…

If you’re a mom, you’ll definitely appreciate the sections about getting kids involved in the kitchen, and having your children create lists of their favorite foods to help guide you while packing lunches. Of course this is something I won’t be dealing with for quite a while, but I’m one of those girls who can’t wait to pack cute little (healthy!) lunches for my kids, so I loved this section too 😀
All of the recipes (some old, some new) look so delicious and easy, perfect for packed lunches, or even perfect for making at the end of a long day when I’m feeling tired and uninspired. I now have over 50 new recipes to add to my “To-Make” list. I think I’m most excited to try the roast beef! Or the chicken and waffles!! In addition to the recipes, Paleo Parents have included 40 meal and snack ideas to help you spice things up and keep your meals exciting and healthy even when you’re short on time.
Let’s also take a second to appreciate how allergen-friendly Paleo To Go is! I don’t have any super severe allergies, but I have friends that do, and I understand how frustrating it can be when you can’t find an egg-free breakfast recipe, or a nut-free recipe for energy bars. Along with an extensive introduction to allergens, how to avoid them, and appropriate substitutes for recipes, each recipe in the eBook is clearly labeled with allergen symbols to signify when a recipe is soy-free, egg-free, etc.
