Sorry for the lack of recipes lately guys! Been super busy working 9-5 Monday-Friday, and things are further complicated by the fact that I need good daylight to shoot recipes in :/ so I’m doing my best!
On a different note, I received some super exciting news this weekend… TransitCenter, an organization dedicated to improving urban transit systems, has chosen to sponsor me for the Millennial Trains Project!! That means I will be joining a small group of passionate, impatient, innovative and entrepreneurial millennials on a 10 day train journey from Portland to New York. The project is essentially an incubator/think tank on rails; while on the train we’ll have seminars with mentors, and when we stop in each of the 8 cities we will have workshops with local leaders and innovators, and we will also have 5-6 hours to work on our own individual project (mine relates to DIY Urbanism and street re-design). I’m SO pumped, I don’t think I’ll ever be able to sufficiently express my gratitude for TransitCenter’s generosity! I hope I make them proud!
The train is stopping in Portland, Seattle, Whitefish MT, St. Paul, Milwaukee, Detroit, Cleveland and NYC, so if you know of any cool organizations in any of those cities with missions related to community building, transportation, or improving public spaces, please leave a comment with their info so that I can try to collaborate with them!
Alright now onto the recipe. In high school, I drank green smoothies on the reg for breakfast (that was back when I didn’t know the importance of protein… oh how things have changed!) Mango, avocado and coconut was one of my favorite combinations back then, so the other day when I was jonesing for a smoothie (I blame the Atlanta humidity) I decided to bring that combo back, but kick it up a notch with the addition of matcha powder!
There are a few optional ingredients that you can include or omit depending on how sweet you want it and how much extra nutritional value you want to add. Totally up to you, but also keep in mind that if you include sweetened protein powder you probably won’t need the honey too. Also, I like to use frozen fruit/avo so that I don’t have to use much ice (if any), so the amount of ice is also up to your discretion! What are your favorite smoothie flavor combos?
- ½ medium avocado
- ½ medium mango
- 1 cup almond or coconut milk
- 2 tsp coconut butter
- 1½ tsp matcha powder
- handful of raw spinach or kale
- 1 tsp apple cider vinegar
- optional: 1-3 tsp honey
- optional: ½-1 scoop vanilla or non flavored protein powder
- optional: 2 tsp ground flax
