So do you guys wanna know what a typical Wednesday looks like for me? Probably not, but I’ll tell you anyways. It starts off with my 9 am geography lecture, then I hit the gym (today was leg day, my fave), then I go home, shower, get in bed and watch Dexter. And look at food blogs. And occasionally eat when I decide that I can brave the cold walk from my room to the kitchen. Exciting, huh? Wednesdays are always so slow for me, I just never have anything to do.
Except tonight I do have something to do… I’ve got a date with my foam roller, the latest Girls episodes, and some kitchen experiments 😀 I may or may not be attempting to make Paleo brookies (brownie+cookie) for Valentine’s day ♥ I’ll let you guys know how that goes..
Oh and y’all, Ashley Beaver of Livin Paleo followed me on Instagram last night!! I’m awestruck, she’s such an inspiration. If you don’t know who she is, she’s an incredible CrossFitter who eats Paleo. So you should all go follow her, mostly because she’s awesome but also because she’s a kick ass athlete who makes delicious Paleo food.
Okay so enough chit chat, here’s today’s recipe: sweet potato chicken burgers! I’ve always loved pairing chicken with sweet potato, and one day when I was deciding what to do with some ground chicken, I thought hey, why not mix in some sweet potato and make some burgers?? So I did. And now we’re here.
- 1¼ cup mashed cooked sweet potato
- 1 lb ground chicken
- 1 Tbsp paprika
- 1 Tbsp garlic powder
- 2 tsp cumin
- 1 tsp cinnamon
- 1 tsp salt
- ½ tsp black pepper
- Combine the mashed sweet potato, ground chicken, and spices.
- Shape into 4 patties.
- Heat a frying pan over medium heat with coconut oil or EVOO.
- Place the patties in the heated pan, and cook for 5-6 minutes per side.
- Serve with your toppings of choice (I like mine with avocado and honey mustard 🙂 )
