Happy hump day! Wednesdays are actually my easiest day here at school because I only have one class all day (Geography), and no society or club meetings. So that means lots of time to cook and eat 🙂 And study of course. Maybe.
But some days I’m incredibly busy and have no time to cook anything too complicated. On days like that, my saving grace is leftovers and food I’ve prepped for the week. But when I don’t have any leftovers or anything prepped, I turn to tuna.
Fun fact, my flatmate Shelby hates what tuna looks like inside the can, so she used to make me open her cans of tuna and mash it up for her in a bowl before she would even look at it. What a goober.
Anywho, one easy way to jazz up tuna is to add curry powder to it. So this is a nice and simple recipe for paleo curried tuna salad, which also tastes amazing with canned salmon. I love the pairing of curried tuna or salmon salad with fresh, crisp apple slices, but you could definitely eat this with cucumbers, carrots, celery, or crackers if you eat grains.
Paleo Curried Tuna Salad
1 can of tuna (or salmon)
1-2 Tbsp coconut milk
1 tsp apple cider vinegar
1-2 tsp curry powder
1/2-1 tsp cinnamon
salt and pepper to taste
1. Mix all the ingredients together.
2. Adjust curry powder, cinnamon, salt and pepper to taste.
3. Serve with apple slices, cucumber slices, carrots, celery or crackers!
