So I got some pretty solid feedback on my Instagram photo of this thang a few days ago (above), so I thought my readers would appreciate the recipe too. I got this recipe/idea from Brandon and Megan over at Health-Bent. GENIUS to wrap the meat around the outside of the sandwich, lettuce wraps can break and get messy really quickly, but flip it inside out and the meat provides a solid wrap! I don’t often eat paleo sandwiches, but this has already become a part of my regular arsenal. Quick, easy, tasty, portable. Doesn’t get much better than that. And I forgot just how freakin’ delicious Italian subs are, or in this case, Italian sub roll ups.
My version goes a little somethin’ like this:
Black forest ham + smoked turkey + salami + tomato + spinach + banana peppers + grainy mustard + O&V + oregano +fresh ground pepper
I’ve also made it with avocado in it. Highly recommended.
This is perfect for packed lunches and picnics, or just to enjoy at home
I also got a question on Instagram about what brand deli meat I use, so I included a picture of them. They’re all nitrate free/minimally processed, and you can find them at Whole Foods.

Okay so these deli sammich roll ups are infinitely adaptable, just take some deli meat you like, lay it out in 2 overlapping rows on some parchment or wax paper, place your fillings on one half of the meat, roll it up, cut it in half and get yo’ freak on.
