I LOVE roasted red peppers. And I’ll let you in on a little secret: they’re stupid easy to make at home. I eat them with pretty much anything, in salads, with eggs or in fritattas, with some deli meat, on burgers, or you can even make roasted red pepper vinaigrette! I know I mentioned doing a little 21 DSD update and sharing some examples of my meals, but I’m gonna push that back to tomorrow so that I can share this with you guys today
So here we go.
Step 1: Preheat your oven on the highest broil setting and make sure you have a rack on the highest level, about 6 inches from the top of the oven. Wash your peppers, rub with a little olive oil, and place on a foil lined baking sheet.
